What's a Specialty Coffee?
Specialty coffees are certified quality coffees, each accompanied by a certificate that verifies its score. They are called Specialty when they meet the following characteristics:
A) Determined Quality: The quality score is assigned by Q-Graders following the cupping protocol of the SCA (Specialty Coffee Association). All Arabica coffees with a score above 80 points can be defined as Specialty Coffees:
- 80 to 85 points: Very good
- 85 to 90 points: Excellent
- 90 to 100 points: Exceptional
B) Absence of Defects: Specialty Coffee must be free of any aromatic and flavor defects that could negatively affect the quality of the coffee.
C) Complete Traceability: Each coffee must be fully traceable, providing detailed information about the production area, producer, processing method, botanical variety, harvest, altitude, and other essential descriptive characteristics.
D) Detailed Description: Specialty Coffee has a distinct identity, with characteristic flavors and specific aromas. Each coffee comes with a detailed profile describing all the taste and olfactory impressions observed during cupping.
